Mango Pudding recipe, a delicious mango dessert without eggs that is easy to prepare based on Agar-Agar, milk, mango puree and sugar

Mango pudding is one of the simplest mango dessert recipes that even a 10-year-old child can prepare. I have not yet met anyone who does not like the king of fruits. I can eat it in any form and at any time of the day and I like to make a lot of Mangolicious recipes before the end of the Season. As a continuation of my Mango Mania series, I present to you a wonderful mango-based dessert. Quick to make, minimal ingredients and super delicious. There’s nothing like digging into a chilled pudding bowl, especially a fruit bowl like mango pudding. Heavenly on hot summer days!

I’m going the egg-free route with the mango pudding recipe. Agar-Agar or Chinese grass is the vegan Option instead of eggs or gelatin. You can use the strip or Agar – Agar powder form. You can find Agar-Agar aka Chinagras at any department store in your city or at an online grocery store. Ripe mangoes with soft flesh with less fiber are best for this Pudding. The Suvarnarekha, Rasalu, Banganapalli, Alphonso and Kesar varieties are ideal for most Mango Dessert recipes.

I followed a very simple mango pudding recipe that uses skim milk and a minimum of sugar. This is not a rich Pudding or too sweet. Sugar or honey are rarely used, because mango gives this Dessert the aroma and natural sweetness. The texture is more of a cross between a thick Pudding and a liquid sauce. A very soft Pudding with a melting texture in the mouth. Sweet, creamy, tropical and decadent dessert for those who love mangoes and have a sweet tooth. I like to garnish the Pudding with chopped mango for that intense mango flavor. You can add soaked Sabja (basil seeds) or chopped nuts for a little crunch. Mango pudding made from Agar-Agar is gluten-free and can easily be vegan by using coconut milk instead of milk. Mango pudding with coconut milk is also delicious.

A perfect dessert during the summer season, when mangoes are available in abundance. Serve the mango pudding in shot glasses for your parties or appointments and it will definitely be a success.

Method of preparing mango pudding-recipe

  • Puree the ripe mango pieces and a quarter of the milk in a blender to a smooth puree. Transfer to a bowl and set aside.
  • Place the Agar-Agar with the water over low heat and continue stirring until the Agar-Agar is completely dissolved.

  • Bring the milk to a boil, add the sugar and cardamom powder. Simmer over low heat for 3-4 minutes. Add the Agar-Agar mixture and continue stirring over low heat for 4 minutes. Turn off the heat and let it cool slightly, but it should be warm.
  • Add the mango puree to the Agar-Agar mixture and mix well.
  • Pour the mixture into serving bowls. Let it set at room temperature and cover with plastic wrap. Refrigerate for at least 3 to 4 hours.
  • Garnish with mango pieces when serving and serve chilled.
